Since getting my air fryer, potatoes are probably my most cooked ingredient in it! So much quicker and easier than the oven, and the results are always perfect, no matter what recipe you are making! Roasted potatoes come out so perfectly crispy and mash is super fluffy. No potato recipe is off limits!

Potatoes are readily available all year round in stores, but you’ll find an abundance of them at your farmers’ markets from August through til October (in the Northern hemisphere).
How to store potatoes
Fresh potatoes have a pretty good shelf life and can last for a couple of months when stored in a cool place in a paper or mesh bag, or cardboard box so that the air can circulate. They are best stored at lower temperatures.
If the skin of the potato is wrinkled, or the potato feels soft then it’s best to discard them. Potatoes that are sprouted are fine to use if the skin is smooth and firm, just cut the sprouts off before preparing.
Cooked potato dishes will generally keep well, covered in the fridge, for up to 3 days, and can easily be reheated in the air fryer.
