When it comes to root vegetables, beets have to be up there as one of my favorites. I love the earthy flavor and they look so vibrant and colorful on the plate!

Roasting beets brings out their natural flavors, but it can take a bit of time, and that’s where our trusty air fryer comes in! Super quick to prep, these beauties are ready to serve in way less time that if you were oven roasting them.

Simply seasoned, these roasted beets are a healthy, delicious and pretty vegetable side dish.

Ingredients

  • Beetroot: Use fresh beets for this recipe. Peel and chop them before seasoning and cooking. I used a mix of red beets, golden beets and chioggia beets for a variety of taste, texture and color.
  • Brown sugar: A little brown sugar helps to balance out the slight bitterness of the beets. It caramelizes as it cooks and adds a complex rich sweetness that works wonderfully with the earthy flavors.
  • Seasonings: Garlic powder, salt and pepper.

Recipe Variations

This air fryer roasted beetroot recipe is pretty delicious as they are, but you can easily substitute the seasonings to suit what you are serving them with. Dried herbs and spices like paprika all work great. In a pinch, you can swap the brown sugar for white, but I would suggest that you use less, maybe one teaspoon rather than one tablespoon, as it has a more harsh sweetness.

I used three different varieties of beets for this recipe, but you can use one or two, the method stays the same.

What are the differences in the varieties of beets?

I used red, golden and chioggia beets for this air fryer recipe. Their main differences are:

RED BEETS – A vibrant and deep red color. They have a deep earthy flavor with a hint of sweetness.
GOLDEN BEETS – An orange/yellow color. They are less sweet than red beets but have a milder earthy flavor.
CHIOGGIA BEETS – Also known as candy stripe beets, they have pink and white colored rings. They have a similar sweetness to red beets but have. milder earthy flavor like golden beets.

Do you have to peel the beets fist?

It’s best to peel the beets first for this recipe. Slice of the root and stem and the skins come off quite easily with a vegetable peeler. Red beets do have a tendency to stain, so don’t peel them over your favorite wooden chopping board. They will stain your hands a little, so if you are worried about that then you can wear kitchen gloves. Golden and chioggia beets don’t stain like reds.

Can you oven roast them instead?

If you don’t have an air fryer, you can roast these beets in the oven instead. I would add a tablespoon or two of oil to them to help them cook more evenly. They will take around 30 to 40 minutes to get tender.

Storage and Reheating

These are best served as soon as they are made, but leftovers will keep well, covered in the fridge, for 3 to 4 days. They are quickly and easily reheated in the air fryer at 380F for 3 to 5 minutes.

Recipe Notes and Tips

  • Cut the beets into quarters through the center to make wedges. If you beets are particularly large, you may want to cut them smaller.
  • Preheat the air fryer before adding them in. If your air fryer doesn’t have a preheat function, set it to run at 400F for 5 minutes while you prep the beets.
  • Give the basket a shake halfway through cooking so that they cook evenly.
  • Air fryer models can run slightly differently so timings may beed to be adjusted. When cooked, the beets should be fork tender but still firm.

  • Slice off the roots and stems and peel the beets. Cut them into quarters through the middle and place them in a bowl.
  • Add in the sugar, garlic powder, salt and pepper and toss to combine.
  • Place in the air fryer basket in an even layer and set it to cook at 380F for 20 minutes.
  • Toss halfway through cooking.
  • Check the doneness of the beets, they should be fork tender but quite firm. Cook for another 5 minutes if required.
