Simply seasoned, these air fryer roasted peppers can easily be served as a vegetable side dish by themselves, or add them to other favorite recipes like soups, stews and salads for a burst of flavor and color.

- Chop the bell peppers and toss in the oil and seasonings (photo 1).

Recipe Variations
These air fryer roasted bell peppers are easy to adapt with different seasonings to suit how yo are serving them. Dried herbs work great, or add some chili flakes or cayenne for a spicier flavor. Cut the bell peppers into thinner strips to make them perfect for fajitas, or try adding in some sliced onions to the air fryer with them.

No. Green bell peppers will taste more bitter than other colors, and red taste the sweetest. Green bell peppers are harvested earliest, and they change color through yellow and orange to red the longer they are left on the plant. Red bell peppers contain the most nutrients and vitamin C.
Air fryer models can run slightly differently, but in my basket air fryer I found that 15 minutes at 400F produced soft, juicy and flavorful roasted peppers. If you want them with a bit more of a bite, 10 minutes of cooking will be plenty, and you can take them for up to about 18 to 20 minutes for softer ones.It’s so easy to cook them exactly how you want.
If you don’t have an air fryer, you can roast the bell peppers on a lined baking sheet at 400F for around 20 to 25 minutes. The method for preparing them remains the same. You can also saute bell peppers in a skillet on the stovetop.

Serving Suggestions
These air fryer roasted bell peppers are a great side dish to get some extra veggies on your plate, and will pair easily with all of your favorite mains. They are also great to add to soups, stews and salads, or any recipe that calls for roasted peppers. I use them to top my crostini canapés, in my roasted vegetable bolognese and to top baked salmon.
Make Ahead, Storage and Reheating
Once cooked, your roasted bell peppers will keep well in the fridge for up to 5 days in an airtight container. They can be used cold, or reheated in the air fryer at 360F for 3 to 5 minutes to warm through.
For longer preservation, they also freeze really well, so it’s a great option if you have had a bumper harvest. Let them cool before storing in a freezer safe container or bag. Thaw in the fridge or at room temperature before using.

Air Fryer Roasted Bell Peppers
Equipment
Ingredients
- 4 bell peppers (I used 2 red, 1 orange and 1 yellow, but any mix of colors can be used)
- 1 tablespoon oil (any high heat neutral oil like canola, vegetable or avocado)
- pinch salt and pepper
- ¼ teaspoon garlic powder
Instructions
- Preheat the air fryer to 400F / 200c.
- Cut the tops off of the bell peppers and chop them into quarters and place in a large bowl.
- Add the oil and seasonings to the bowl and toss so that the peppers are well coated.
- Place in the pre heated air fryer at 400F / 200c for 15 minutes. Flip over halfway through cooking.
- For peppers with more of a bite, reduce the cooking time, and on more time for softer more charred peppers.
