This recipe can easily be adapted to use for other waxy varieties like baby or fingerling potatoes. It’s best not to cook starchy potatoes like russets using this method as I find they come out better with par-boiling first.
If I can avoid peeling potatoes then I will! Red potatoes have thin skins so there is no need to peel them first, just wash them under running water to remove and loose dirt and you are good to go. When air fried, the skins get nice and crispy and they also contain lots of fiber, vitamins and minerals.
If you prefer to peel the potatoes, then that’s fine too!
Reds are nutrient dense and the USDA food database states that they are the healthiest variety of potato.

It’s best not to cut the potatoes too far ahead of time as they can start to brown.
Once cooked, the potatoes will keep well, covered in the fridge for up to 4 days. They can easily be reheated in the air fryer at 400F / 200c for 3 to 5 minutes.

Air Fryer Red Potatoes

Ingredients
- 2 pounds red skinned potatoes (900g)
- 3 tablespoons oil
- ½ teaspoon garlic powder
- ½ tablespoon paprika
- ¼ teaspoon salt
- pinch black pepper
Instructions
- Preheat the air fryer to 400F / 200c.
- Clean the potatoes to remove any loose dirt and chop the into smaller chunks. Nothing too small, a little larger than bite sized.
- Place the chopped potatoes into a large bowl and add the oil and seasonings. Toss to coat the potatoes well.
- Place the potatoes in the air fryer basket and set to cook at 400f / 200c for 20 minutes. Toss halfway through cooking to help them cook evenly.
- Check for doness at 20 minutes. They should be tender. If needed, set to cook for an additional 5 minutes.
