When it comes to potatoes, it’s hard to choose a favorite, but fingerlings are definitely up there! These small waxy potatoes have a thin skin and a creamy flavorful flesh that’s quite irresistible.
Quickly cooked in the air fryer, the skins get nice and crisp and the middles are perfectly tender. Perfect to serve as a potato side dish for a weeknight dinner, but fancy enough that they wouldn’t be out of place on any holiday table.

- Fingerlings: Fingerlings are small potatoes that are oblong in shape, they look a little like mini Russets but with a waxy skin.

- Cut the fingerlings in half and toss in the oil and seasonings (photo 1).

Recipe Variations
This air fryer fingerling potato recipe is pretty simple, but you can easily adapt the seasonings to suit your tastes. Try adding a tablespoon of dried herbs, so some spices like paprika or turmeric. This recipe will also work well with baby potatoes.

The skin of fingerlings is very thin, so there is no need to peel them first. Give them a wash under water to remove any loose dirt, then cut them in half, season and cook. They are so quick to prep!
I love cooking these in the air fryer as they are ready to serve in about half the time compared to oven roasting. If you don’t have an air fryer, once oiled and seasoned, place the fingerlings on a baking sheet and roast at 400F for 30 to 40 minutes, flipping halfway through.

Make Ahead, Storage and Reheating
It’s best not to prep the potatoes too far ahead of time, as when you cut them in half they will slowly start to brown.
Perfect to serve as soon as they are ready, these air fried fingerlings also reheat quickly and easily. Once cooked, let them cool before storing in an airtight container in the fridge for up to 4 days. Reheat them in a preheated air fryer at 400F for 3 to 5 minutes to heat them through.
Recipe Notes and Tips
- Preheat the air fryer before adding the potatoes, this will help them to cook more evenly. If your air fryer doesn’t have a preheat setting, just let it run for 5 minutes at 400F while you prep the potatoes.
- Toss the potatoes well in the oil and seasonings. I find it easiest and quickest to do this with my hands.
- Shake the basket halfway through cooking. If you are doubling the recipe, you may need to move the potatoes round a few times during cooking so that they brown evenly.
- Air fryer models can run slightly differently, timings may vary slightly.

Air Fryer Fingerling Potatoes
Equipment
Ingredients
- 1 pound fingerling potatoes
- 2 tablespoons oil
- 1 teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat the air fryer to 400F / 200c.
- Cut the fingerlings in half lengthways and place in a large bowl.
- Add the oil and seasonings to the potatoes and toss to coat.
- Place the potatoes in the air fryer basket and cook at 400F / 200c for 15 to 18 minutes, shaking halfway through, til golden brown.
