Hasselback potatoes are one of my favorite potato sides, but I rarely make them as they take an age to bake in the oven. Well no more thanks to the trusty air fryer!

Simple to prep, these air fryer hasselback potatoes are perfectly crispy, and the insides are buttery and fluffy, every bite is super tasty and they are so effortless to make. They pair easily with all of your favorite main meals, and go as crazy as you like with the toppings!

  • Salted butter: The key to super tasty potatoes is butter! Melt the butter with the oil and brush over the potatoes for a rich flavor.
  • Oil: Any kind of high heat neutral oil will work in this recipe, canola, avocado or vegetable all work great.
  • Seasonings: Salt, pepper and garlic powder.
  • Potatoes: Use large starchy potatoes like Yukon Gold or Russet.

  • Slice the potatoes, brush over the oil, butter and seasonings and place in the air fryer (photo 1).
  • Cook til crispy and tender (photo 2).

Recipe Variations

These air fryer hasselback potatoes are simply seasoned, so you can easily adapt them to suit your tastes. Other dried spices and herbs can also be used, like paprika or onion powder. To make these vegan, simply omit the butter and just brush them with seasoned oil.

You can easily dress these up with your favorite toppings too. I went with a simple dollop of sour cream and some freshly chopped chives, but shredded cheese, crispy bacon or cottage cheese all work great.

Frequently Asked Questions

How long does it take to cook a potato in the air fryer?

Cooking these hasselback potatoes in the air fryer takes around 30 minutes. Depending on the size of your potatoes and your model of air fryer, the time could increase or decrease slightly. Check them at around 25 minutes to check how they are doing. The easiest way to check them is with a tooth pick inserted into the bottom of the potato to see how tender they are.

What are the best potatoes to use?

Without a doubt, you will want to use starchy potatoes for this recipe. Yukon Gold and Russet both work great, or any baking potato. You can make these with waxy potatoes, but they won’t be as fluffy in the middle.

Can you oven bake them?

If you don’t have an air fryer you can oven bake these as well, it will just take a little while longer. Bake them at 400F / 200c for around an hour.

Recipe Notes and Tips

  • Preheat your air fryer before adding the potatoes so that they cook through evenly. If your air fryer doesn’t hve a preheat button, just run it at 400F for 5 minutes.
  • Take care not to cut the potatoes all the way through. You can use chopsticks or a wooden spoon to guide you; place the potato between two chopsticks on the counter and it will stop the knife from cutting all the way through.
  • Slice the potatoes as thinly as you can.
  • Once cut, fan the potatoes out and use a brush to brush the butter and oil in between the slices. Oil all over the outside of the potato.
  • Different air fryer models can run differently. Check to see if your potatoes are tender by inserting a toothpick in the bottom and cook for longer if needed.

Equipment

Ingredients

  • 1 tablespoon salted butter
  • 1 tablespoon oil
  • pinch salt and pepper
  • ½ teaspoon garlic powder
  • 2 Russet or Yukon Gold potatoes

To serve

  • sour cream
  • chopped chives

Instructions

  • Preheat the air fryer to 400F.
  • Add the butter, oil and seasonings to a small pot and place on a low heat to melt the butter.
  • Wash and dry the potatoes.
  • Cut thin slices across the width of the potatoes about ⅔ down. Don't cut all the way through.
  • Gently fan out the slices and brush the butter and oil mix all over and in between the slices.
  • Place in the air fryer at 400F for 30 minutes or until tender.
  • Serve topped with sour cream and chopped chives, or your other favorite toppings.
