Ingredients

  • Tomatoes: Fresh tomatoes are key in any salsa recipe, but for the BEST salsa, I highly recommend using cocktail tomatoes.
  • Cilantro: Cilantro is a must in any Mexican recipe! If you really don’t like cilantro, you can swap it for parsley to get that fresh herby flavor.
  • Lime: Use both the zest and juice for a great tangy taste.
  • Jarred Crushed Chillies: I prefer to use jarred chilies rather than fresh for this recipe. You can use fresh, but I find that this is an easy way to control the spice level to your preference.
  • Red Onion: Red onion gives a milder flavor to the salsa and really lets the taste of those fresh tomatoes shine through.
  • Garlic: Use fresh garlic cloves for the best taste. You can use garlic powder in a pinch.
  • Sugar, cumin and salt

Serving Suggestions

This blender salsa is obviously great served up with a big bowl of tortilla chips, along with some awesome guacamole, but there’s lots of other ways you can use it too!

Make Ahead and Storage

Once made, the salsa will keep well in a sealed jar in the fridge for around a week, and it can definitely be made a few days ahead of time and it will still taste super fresh.

The salsa can be frozen, though it won’t keep it’s freshly blended vibrancy, but it will still taste good. Just drain of any watery liquid after thawing, and serve.

What’s the best blender to use?

I use my Ninja Blender for this recipe, it never fails me. You can also use a food processor.

What are the best tomatoes to use for salsa?

Most salsa recipes use Roma tomatoes, but I’m here to tell you that cocktail tomatoes are the way forward! They contain less water, so you get a nice thick salsa, but still have a wonderful fresh sweetness to them that’s really hard to beat. Trust me on this, they will change your salsa game!

How do you avoid watery salsa?

Sloppy salsa is not much fun. First off, pick the right tomatoes (see above!) and second, don’t over blend the ingredients or they will become soupy. Pulse, rather than continuously blend, and stop as soon as everything is broken down and combined, but still a little chunky.

Ingredients

  • 16 ounces cocktail tomatoes (halved) (454g)
  • 0.7 ounces fresh cilantro (a small blister pack) (20g)
  • juice and zest of 1 lime
  • ½ red onion (chopped into thirds)
  • ½ tablespoon Jarred crushed chilies (this is for a mild salsa, add more if you like it spicy!)
  • 2 garlic cloves (peeled)
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ teaspoon ground cumin

Instructions

  • Half the cherry tomatoes, chop the red onion and peel the garlic cloves.
  • Place all of the ingredients into your blender.
  • Pulse a few times until the ingredients are processed and combined, but stop when you still have a chunky consistency.
  • Taste for seasoning and stir additional salt, sugar or chili into the salsa to suit your tastes.
