Full of fresh flavors, this sweet, savory, tangy and spicy blueberry salsa recipe is a must make! Made with blueberries, corn, lime juice, red onion, cilantro and jalapeรฑo, it comes together in minutes and is perfect for dipping and topping proteins, tacos and salads this summer.

Ingredients

  • Blueberries: Fresh blueberries are lightly mashed before being mixed with the other ingredients. You can use frozen, but they will need be be fully defrosted before using.
  • Corn: Fresh corn on the cob is perfect for this recipe. You can use frozen corn, just defrost it first. Canned corn also works great and is probably the most convenient option.
  • Red Onion: A little red onion adds a delicious sharpness. Dice it finely so that it’s not overpowering.
  • Fresh cilantro: For that fresh herby taste. If you don’t like cilantro, parsley is a good substitute.
  • Jalapeno: Finely diced jalapeno adds the perfect spice to each bite. Use more or less depending on your tastes.
  • Lime Juice: Fresh lime juice is best for this recipe, but bottled will work in a pinch.
  • Salt: A little salt helps to balance out the sweetness and sharpness and brings all of the flavors together wonderfully.

  • Very finely dice the onion, jalapeno and cilantro.
  • Lightly mash the blueberries in a bowl.
  • Add in the corn and all of the other ingredients.
  • Mix together until well combined.

Recipe Variations

It’s easy to make this blueberry salsa your own!

  • A diced bell pepper makes a great addition for more crunch and color.
  • Add in a little honey if you prefer a sweeter salsa.
  • Adjust the amount of jalapeno used to suit your tastes. This recipe has a hint of spice, but it is not overly hot.
  • Make it fruitier by adding another summer fruit like strawberries or blackberries.
  • Lime is a traditional ingredients in Mexican salsa, but lemon juice will also work well.
  • If you have a few more minutes to spare, char the corn before adding it to the blueberries.

Make Ahead and Storage

Because of all of the fresh ingredients used in the blueberry corn salsa, it is best eaten the day that it is made. It will still be good after 2 or 3 days, but it will lose some of that vibrant flavor. Store in the refrigerator and keep it covered to keep it as fresh as possible. Not suitable for freezing.

Ingredients

  • 1 cup fresh blueberries (150g) If using frozen, fully defrost them.
  • ยฝ cup corn kernels (80g) Can use fresh, frozen or canned. If using frozen, fully defrost them.
  • ยผ small red onion finely diced
  • 6 cilantro stems with leaves finely diced
  • 1 jalapeno finely diced
  • juice of 1 lime
  • ยผ teaspoon salt

Instructions

  • Add the blueberries to a bowl and lightly mash with a fork.
    1 cup fresh blueberries
  • Finely dice the onion, cilantro and jalapeno and place in the bowl with the blueberries.
    ยผ small red onion, 6 cilantro stems with leaves, 1 jalapeno
  • Add all of the rest of the ingredients to the blow and stir to combine.
    ยฝ cup corn kernels, juice of 1 lime, ยผ teaspoon salt

Notes

  • Recipe is easily doubled to serve more.
  • Dice the ingredients as finely as you can so everything mixes together well.
  • Best enjoyed the day you make it.
  • Store covered in the fridge.
