Spinach, Blueberry and Feta Salad with Lemon Dressing

Wonderfully fresh and zingy, sweet and salty, this simple spinach, blueberry and feta salad tastes like summer! Quick to make with just a few basic ingredients, this green leafy salad with lemon dressing, is a great side dish at a BBQ or cookout, or, an easy way to add some goodness to a weeknight dinner.

This has become a go to salad recipe for me when friends come over for a summer BBQ. Obviously I like to have several sides on offer, and next to the heavier pasta and potato salads, a green leafy salad is a must.

This spinach salad is perfectly fresh and bright, thanks to a very simple lemon dressing, blueberries add bursts of sweetness and the saltiness of feta cheese balances everything wonderfully. Make this tossed salad the star of your next get together!

Ingredients

  • Baby spinach: Baby spinach leaves are tender and ready to eat, so no prep needed, just give them a quick wash!
  • Blueberries: Blueberries are a ‘superfood’! They add a wonderful sweetness to the salad and are loaded with nutrients.
  • Feta: Use fresh crumbled feta for the best creamy flavor.
  • Lemon: We use both the zest and juice of a lemon for the salad dressing for a really zingy flavor.
  • Extra Virgin Olive Oil: For the salad dressing. You can use a light olive oil if you don’t like the stronger flavor.
  • Seasonings: Black pepper, salt and garlic powder.

  • Mix together the ingredients for lemon salad dressing (photo 1).
  • Place the spinach, blueberries and crumbled feta into a large serving bowl (photo 2).
  • Pour over the dressing and toss everything together (photo 3).

Recipe Variations

I love the simplicity of this spinach blueberry and feta salad, but it’s easy to make it your own, or make use of other ingredients you have to hand with this recipe:

Add nuts: Nuts will add a great crunchy texture, slivered almonds or walnuts would make great additions.

Make it a fuller meal: Add in some shredded chicken or chickpeas for a healthy lunch option.

Swap the cheese: Goats cheese would work great!

Use different dressings: I love the easy lemon dressing, but why not try this recipe with my Orange Balsamic Vinaigrette or Apple Cider and Mustard Dressing instead.

This summer salad is the perfect accompaniment to your BBQs, but it’s also great to use as an everyday salad with chicken and fish dishes. Try it with some of these favorites:

Make Ahead and Storage

For best results, don’t make this spinach, blueberry and feta salad more than an hour ahead of time as the dressing will start to wilt the spinach. I like to make the dressing separately and pop the salad ingredients in a bowl ahead of time and then just toss everything together when it’s time to eat.

Leftovers can be stored in an airtight container in the fridge. It will keep well for a day or two. There is only a little dressing used, so it holds up pretty well.

  • Use an unwaxed lemon, or wash well with warm water before zesting it.
  • For the best results, use a fresh block of feta and crumble it. Ready bought crumbled feta can be drier and have less flavor, though it’s still tasty and is less messy and quicker!

Ingredients

  • 1 box baby spinach (11oz / 312g)
  • 1 small box fresh blueberries (6oz / 170g)
  • 1 cup crumbled feta (150g)

For the lemon dressing

Instructions

  • Add the baby spinach, blueberries and crumbled feta to a large salad bowl. Place to one side.
  • Mix the ingredients for the lemon dressing together in a sperate bowl.
  • When ready to serve, pour the dressing over the salad and toss everything together.
