Air Fryer Roasted Vegetables

Seasoned roasted vegetables are so quick and easy to cook in the air fryer. Sweet potatoes, Brussels sprouts, carrots, garlic and red onion are tossed in dried herbs before being air fried. Ready in a fraction of the time compared to oven roasting.

I love love love roasted vegetables, but I don’t love how long they take! to cook! I was dubious about how well these would come out in the air fryer, but let me tell you, these are hands down delicious!
Roasting enhances the flavors of vegetables as their natural sugars caramelize, and that is easy to replicate in half the time in the air fryer.
Made with a selection of seasonal vegetables, this veggie side dish is a great option for Thanksgiving and Christmas.

- Toss the peeled and chopped vegetables in oil and seasonings (photo 1).

Recipe Variations
You can easily make these air fryer roasted vegetables to suit your tastes by adding different seasonings. Different dried herbs and herb mixes can be used, or try adding in some red chilli flakes for a little kick.

It’s definitely best to use oil for this dish. Air fryers use a dry heat to cook, so without the oil they can dehydrate. Oil also helps them to cook evenly and result in those perfectly crispy edges.
You can easily add different veggies to this air fryer recipe. It’s best to stick to denser root veggies like parsnips, beets or squash which will have a similar cooking time. If you want to add in softer veggies like bell peppers, zucchini or mushroom, add those in halfway through cooking as they will need less time.
One of my favorite things about the air fryer is how well it will reheat food, and these veggies are no different. They will keep well in the fridge for a couple of days and can be reheated at 400F for 3 to 5 minutes.
You can prep the veggies and toss them in the oil and seasonings and then keep covered in the fridge for up to 24 hours til you are ready to cook.

- Cut the vegetables into evenly sized pieces so that they cook through evenly.
- Use your hands to ensure that the vegetables are well coated in the oil and seasonings.
- Preheat your air fryer before adding the veggies. If your air fryer doesn’t have a preheat setting, let it run at 400F for 5 minutes.
- Shake your veggies several times during cooking so that they roast evenly.
- If you double the recipe, you may need to cook for slightly longer, and shake a few more times so that they are fully cooked.

Air Fryer Roasted Vegetables
Equipment
Ingredients
- 1 red onion
- 10 ounces Brussels sprouts (7 to 8)
- 1 sweet potato
- 4 heirloom carrots (or regular)
- 4 garlic cloves
- ¼ cup oil (4 tablespoons)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon Italian seasoning
Instructions
- Preheat the oven to 400F.
- Prep the veggies. Peel and cut the red onion into wedges, remove the outer leaves of the sprouts and cut in half, peel and cut the carrots into chunks, peel and cube the sweet potato and peel the garlic.
- Add the veggies to a large bowl with the oil and seasonings and toss to combine.
- Place in the air fryer basket and cook at 400F for 20 to 25 minutes. Toss at 10 minutes and then several more times during cooking until tender and browned.

Will this work in stove/air fryer as well…..same temp and cook time??
Hi Audrey, I haven’t tried it, but as far as I know it should be the same. Definitely the same temperature, but you may need an additional few minutes to get everything tender.
