- Simple ingredients: You only need a handful of everyday ingredients to make this recipe.
- Dietary info: This Cajun pasta salad is vegetarian.
Ingredients
- Pasta: I made this pasta salad with elbow macaroni, but most short dried pastas will work well. Penne, farfalle (bow tie), fusilli and orecchiette will all work well.
- Bell peppers: I used a mix of green and red bell pepper, they add a great crunch texture and fresh flavor. Dice them finely so that they combine well with the other ingredients.
- Cilantro: Cilantro adds a great herby freshness. Chop it as finely as you can.
- For the creamy dressing: Mayonnaise, apple cider vinegar, Cajun seasoning, black pepper and garlic.

Frequently Asked Questions
This pasta salad will keep well in the fridge for around 4 to 5 days in a sealed air tight container. Just give it a stir before you serve and it’s good to go. It’s best to allow the salad to sit for at least half an hour in the fridge before serving. This allows the flavors to melt together and the acid from the vinegar will mellow out.
Your pasta should be cooked just past al dente, so it’s not to firm or too soft. As soon as it’s done cooking, drain it and rinse it under cold running water. This will help to stop the cooking process and prevent your pasta sticking together.
Because this Cajun pasta salad has a mayonnaise based dressing, it’s important to cool the pasta before adding it. If the dressing to hot pasta it can separate and become very oily. This pasta salad is best served chilled or at room temperature. Due to the mayo dressing, it shouldn’t be left at room temperature for more than a couple of hours.
