Ingredients and Notes

- Potatoes: Use Russet of Yukon Gold potatoes for the bet results. These potatoes result in a fluffy centre and crispy edges. It’s best to avoid waxy potatoes like reds or fingerlings.
- Oil: Any neutral flavored oil with a high smoke point will work well. Sunflower, avocado, canola or vegetable oil are all great options.
- Seasonings: I simply seasoned these with salt and black pepper, but you can easily add additional seasonings if you’d like.

Peel and slice the potatoes and rinse them under running water.

Oil and season the potatoes.

Place the seasoned sliced potatoes into the air fryer basket.

Cook until crispy and golden brown.
Recipe Variations
You can season these sliced potatoes however you want! I love them with just some salt and pepper, but you can add in other seasonings like garlic powder, paprika or dried herbs. Try sprinkling in some grated parmesan.
Make Ahead and Storage
You can peel and slice the potatoes a couple of hours ahead of time and keep them in a bowl of water to prevent them from browning. When you are ready to cook them, pat them dry to remove excess water, then oil, season and cook.
They are best eaten as soon as they are made, but leftovers can be reheated in the air fryer at 375F / 190c for a few minutes to warm through.

If you use potatoes with a fairly thin skin, then you don’t have to peel them. Just give them a good wash and then slice.
Slice the potatoes about 1/4 inch to 1/8 inch. Don’t worry about slicing them too perfectly, it’s fine if some are a little thicker than others. You can use a mandoline if you want them to be uniform.

- 1 pound potatoes Russets or Yukon Gold (450g)
- 2 tablespoons oil (canola, avocado, sunflower etc)
- 1 teaspoon salt
- generous pinch black pepper
To serve (optional)

Instructions
- Peel the potatoes. Slice them around ⅛ to ¼ inch thickness.1 pound potatoes
- Rince the slices under cold running water and pat dry.
- Place them in a large bowl and toss in the oil and salt and pepper.2 tablespoons oil, 1 teaspoon salt, generous pinch black pepper
- Even;ly spread the slices in the air fryer basket. Set to cook at 375F / 190c for 20 minutes.
