This honey mustard salad dressing is the perfect balance of sweet and tangy. Made with freshly squeezed lemon juice, honey and some herbs, it’s light, zingy and flavorful and can be used on your everyday lunchtime salads.

Ingredients
- Garlic: Use a freshly minced garlic clove for the best flavor.
- Extra Virgin Olive Oil: Extra virgin olive oil is best to use for dressings and it has a bold and rounded flavor. In a pinch, you can use regular.
- Lemon Juice: Use fresh lemon juice for this recipe. Do not (and I can’t emphasize that enough!) be tempted to use bottled juice, it won’t be nearly as good. Just use a good lemon juicer and it will take you a matter of minutes to juices them.
- Honey: For the best flavor use raw natural honey rather than artificial. It will have a richer and less chemically flavor.
- Seasonings: Salt, pepper and dried oregano.
- Brown sugar: This is optional, but I found that the brown sugar really help round the flavors.

This homemade salad dressing is super easy to make. Simply whisk the ingredients together and you are good to go!
Recipe Variations
This honey lemon dressing is pretty good as it is, but you can easily make some easy swaps to make it your own.
- Make it vegan. Swap the honey for maple syrup.
- Mix up the fruit juice. Try swapping the lemon for orange or lime.
- Use different herbs. I love the flavor of oregano, but other dried herbs like parley, basil or Italian seasoning will work well.

Once you have made your salad dressing, transfer it to a sealable jar or bottle and it will keep well for 1 to 2 weeks. Although it is ready to use straight away, the flavor of the garlic and herbs will become deeper the longer it sits.
When the dressing sits, the ingredients will settle, so you will need to give it a shake before using. If your fridge runs super cold, the oil can solidify, if that happens, just let it come to room temperature for 30 minutes before using.
Homemade salad dressing is so much fresher than store bought, and you have full control of what goes into it. Add more seasonings, more oil or more lemon juice to get it just how you want it. It’s also way more economical than buying ready made bottles, you can make several batches with the ingredients you buy.

Honey Lemon Salad Dressing
Ingredients
- 1 garlic clove (minced)
- 1 cup extra virgin olive oil (250ml)
- ½ cup fresh lemon juice (125ml / about 3 lemons)
- ⅓ cup honey (80ml)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon dried oregano
- 1 tablespoon brown sugar
Instructions
- Add the ingredients to a jug or bowl and whisk together.
