Seasoned with garlic and herbs, these roasted rutabaga cubes are so quick and easy to make in the air fryer. Perfectly tender with crispy browned edges, they are the perfect side dish for Thanksgiving and Christmas.

If there’s one root vegetable that has to appear on my festive menus, it’s got to be rutabaga! I rarely have it any other time of the year, but the Christmas table would not be complete with out it!

Roasting rutabaga brings out it’s natural sweetness, and you just need a few simple seasonings to make this veggie shine.

Cooking the rutabaga in the air fryer produces a really great result, perfectly tender with golden brown edges. It also helps to free up room in your oven for your Thanksgiving turkey!

Make Ahead, Storage and Reheating

You can easily prep this air fryer rutabaga an hour or two ahead of when you want to cook it. Cut and season, then keep covered in the fridge until you are ready to cook it.

It’s best enjoyed as soon as it’s cooked, but leftovers will keep well for around 3 days. They can quickly be reheated in the air fryer for 3 to 4 minutes at 360F / 180c.

Recipe Notes and Tips

  • Try to cut the cubes as evenly as possible. They don’t have to be exactly the same size, but make them fairly uniformed so that the cook evenly.
  • Cook the rutabaga in a single layer in the air fryer so that they get crispy edges. If you are using a large veggie, you may need to cook it in batches.
  • Give the basket a shake half way through cooking. This helps them to cook evenly.
  • Different models of air fryer can run differently. The rutabaga is cooked when fork tender with browned edges.

  • Using a sharp knife, cut the ends off of the rutabaga and cut in half. Peel of the skin, and cut into ½ inch cubes.
    1 medium rutabaga
  • Place the cubes into a large bowl and add the oil and seasonings. Toss well to combine.
    1 tablespoon oil, ½ teaspoon salt, pinch black pepper, ½ teaspoon garlic powder, ½ teaspoon Italian seasoning
  • Place the seasoned rutabaga in the air fryer basket in a single layer. Set to cook at 400F / 200c for 15 minutes.
  • Give the basket a shake half way through cooking so that the cubes brown on all sides.
  • Use a fork to check the cubes are tender. Serve.
