Pumpkins aren’t just for jack o’lanterns, they are also great on your plate! This tasty vegetable side dish recipe comes together easily and cooks quickly in the air fryer.

Seasoned with cinnamon and ginger, each bite has a taste of warming spice with a hint of saltiness. The maple syrup adds a touch of sweetness and the pumpkin flesh is perfectly tender.

  • Pumpkin: Use an edible pumpkin variety, not a decorative one. I used a small pie pumpkin for this recipe.
  • Oil: Use a neutral flavored oil like canola, olive, avocado or vegetable.
  • Maple Syrup: This adds a hint of sweetness and helps to caramelize the edges.
  • Seasonings: Ginger, cinnamon and salt. This sweet and salty mix of seasonings also has some warmth. Use ground cinnamon and ginger.
  • Optional garnish: Dried cranberries and pumpkin seeds.

How to make Air Fryer Roasted Pumpkin

It’s so easy to make this pumpkin side dish!

  • Cut the pumpkin in half, and then into wedges. Remove the skin with a vegetable peeler.
  • Place the wedges into a large bowl and toss them with the oil, maple syrup and seasonings so they are well coated.
  • Air fry til tender.

Recipe Variations

I love the warm and sweet flavors of this recipe, but you can easily use different seasonings to suit your tastes. Use savory herbs, or add a little spice. Try using:

  • Garlic powder
  • Paprika
  • Chili Flakes
  • Italian Seasoning
  • Curry Powder
  • Rosemary
  • Thyme

Frequently Asked Questions

Can you use frozen pumpkin?

No. It’s best to use fresh pumpkin for this recipe.

Can you cut the pumpkin into chunks?

Yes. My pumpkin had fairly thin flesh, so it was best to cut them into wedges. If yours is thicker, you can cube it. They may need an extra couple of minutes to become tender as they are thicker. Use a fork to check when they are done.

Make Ahead, Storage and Reheating

You can cut and season the pumpkin a couple of ours ahead of time and keep it covered in the fridge or at room temperature.

This recipe is best enjoyed as soon as it’s cooked, but leftovers will keep well in the fridge in an air tight container for 3 or 4 days.

Reheat it in the air fryer at 360F / 180c for 3 to 5 minutes to war it through to serve.

Recipe Notes and Tips

  • Use a large sharp chefs knife to cut the pumpkin in half and into wedges.
  • Use a vegetable peeler to remove the skin. I find it easiest to do this once it’s been cut into wedges. If your pumpkin has a thick flesh, you can use a sharp knife to cut off the skin.
  • Different models of air fryer can run differently. Check the pumpkin for doneness with a fork a few minutes before the time is up, the flesh should be tender.

  • Using a sharp knife, cut the pumpkin in half. Use a spoon to remove the seeds and pulp. Cut the pumpkin into wedges and remove the skin.
    1 pie pumpkin
  • Place the wedges in a bowl and toss in the oil and maple syrup.
    1 tablespoon oil, 2 tablespoons maple syrup
  • Add the seasonings and use your hands to combine everything together, making sure that the wedges are well coated.
    ½ teaspoon salt, ½ teaspoon ground cinnamon, ½ teaspoon ground ginger
  • Place the seasoned pumpkin in the air fryer basket and cook at 400F / 200c for 10 minutes.
  • Check for doneness with a fork, the pumpkin should be tender.
