- ½ honeydew melon (seeds removed)
- ½ English cucumber
- ½ red onion
- ½ cup cilantro
- ¼ teaspoon salt (or to taste)
- black pepper (to taste)
- juice of 1 lime
- 1 teaspoon sugar (optional and to taste)
Dice the melon, cucumber and red onion and add to a large bowl.
Roughly chop the cilantro and add to the bowl with the rest of the ingredients.
Toss to combine.
For best results, let sit in the fridge for 30 minutes before serving. Taste before serving and adjust seasonings if needed.
- Dice the cucumber and melon smaller for salsa and larger for a side salad.
- I prefer to keep the green skin on the cucumber, but you can remove it if you like.
- If you can, allow the salad to sit in the fridge 30 minutes before serving to let the flavors develop.
- Taste before serving and add sugar, salt and pepper to taste.
