Melon Cucumber Salad Recipe

Serve this refreshing and healthy melon cucumber salad as a delicious salsa or side salad. Quick and easy to make with hints of lime and cilantro.

Ingredients

  • ½ honeydew melon (seeds removed)
  • ½ English cucumber
  • ½ red onion
  • ½ cup cilantro
  • ¼ teaspoon salt (or to taste)
  • black pepper (to taste)
  • juice of 1 lime
  • 1 teaspoon sugar (optional and to taste)

Instructions

  • Dice the melon, cucumber and red onion and add to a large bowl.
  • Roughly chop the cilantro and add to the bowl with the rest of the ingredients.
  • Toss to combine.
  • For best results, let sit in the fridge for 30 minutes before serving. Taste before serving and adjust seasonings if needed.

Notes

  • Dice the cucumber and melon smaller for salsa and larger for a side salad.
  • I prefer to keep the green skin on the cucumber, but you can remove it if you like.
  • If you can, allow the salad to sit in the fridge 30 minutes before serving to let the flavors develop.
  • Taste before serving and add sugar, salt and pepper to taste.
