Simple and quick to make, this lettuce Greek salad is a twist on the original. Tossed in a red wine and herb dressing it's perfectly fresh and delicious.

Ingredients
For the dressing

tablespoons
extra virgin olive oil
1
tablespoon
red wine vinegar
1
teaspoon
dried oregano

teaspoon
salt
(or to taste)

black pepper
(or to taste)
juice of ½ lemon
For the salad

romaine lettuce
(chopped)

cherry tomatoes
(quartered)

cucumber
(diced)

kalamata olives
(sliced)

feta cheese

Instructions
Mix together the ingredients for the salad dressing.
Chop the salad ingredients and place in a large bowl.
Pour over the dressing and toss everything together.
Notes
Chop your veggies into similar sized small pieces so that it's easy to eat and everything combines easily.
Don't dress the salad until just before serving so that the lettuce stays nice and crisp.
Once tossed, sprinkle over. little salt and black pepper to enhance the flavors further.
