Using a large sharp knife, cut off the end and top of the butternut squash, and cut in half lengthways.

Using a spoon, scoop out the seeds and discard.
Use a vegetable peeler to remove the skin of the squash.
Cut the squash into 1 inch cubes and place in a bowl.
Add the oil and maple syrup to the squash. Toss well to coat the cubes.

Add the garlic, sage and salt to the squash and stir well to combine.

Place in the air fryer basket in a single layer.
Cook in the air fryer at 400F / 200c for 15 minutes. Shake the basket halfway through.
Check for doneness around 13 minutes. The butternut squash should be fork tender.
