  • Wash the potatoes and cut into fries of an even thickness.
  • Place the cut potatoes into a bowl of water for at least 30 minutes.
  • When ready to cook the fries, preheat the oven to 430F / 220c.
  • Drain the potatoes and pat dry with kitchen paper.
  • Place the fries in a bowl, add the oil and seasonings and toss well to coat.
  • Lay the potatoes in a single layer on a foil lined baking sheet.
  • Oven bake for 50 minutes to an hour til golden brown and crispy, and flip halfway through cooking.

Notes

  • Cut the red-skinned potatoes as evenly as you can. The thinner you cut them, the crispier they will be.
  • The water for soaking should be ice cold for the best result.
  • Flip the fries halfway through the cooking to let them cook evenly.
  • Cook them in a single layer to make sure they turn crispy and not steamed.
