- 1 pound cherry tomatoes (450g)
- ¼ large red onion (or ½ of a small one) finely diced
- ¼ cup fresh cilantro finely chopped (4 tablespoons)
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- pinch black pepper
- ½ teaspoon white sugar (table / granulated)
- juice of ½ lime
Quarter the cherry tomatoes, dice the red onion and chop the cilantro.
Add all of the ingredients to a bowl and stir to combine.
Let sit covered in the fridge for 30 minutes before serving.
- I like to quarter the cherry tomatoes so that they are small in size making them great for topping or scooping. You can just half them if you prefer.
- Dice the red onion finely so that it mixes well with the other ingredients and isn't too overpowering.
- The secret to this salsa is to use the freshest and best ingredients. Do not be tempted to use bottled lime juice!
