Cherry Tomato Salsa with Red Onion

Fresh and delicious, this cherry tomato salsa is sweet, tangy and so easy to make! It's the perfect accompaniment to any Mexican feast!

Ingredients

  • 1 pound cherry tomatoes (450g)
  • ¼ large red onion (or ½ of a small one) finely diced
  • ¼ cup fresh cilantro finely chopped (4 tablespoons)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • pinch black pepper
  • ½ teaspoon white sugar (table / granulated)
  • juice of ½ lime

Instructions

  • Quarter the cherry tomatoes, dice the red onion and chop the cilantro.
  • Add all of the ingredients to a bowl and stir to combine.
  • Let sit covered in the fridge for 30 minutes before serving.

Notes

  • I like to quarter the cherry tomatoes so that they are small in size making them great for topping or scooping. You can just half them if you prefer.
  • Dice the red onion finely so that it mixes well with the other ingredients and isn't too overpowering.
  • The secret to this salsa is to use the freshest and best ingredients. Do not be tempted to use bottled lime juice!
  • Taste and adjust the seasonings to suit your tastes.
