For the salad
- 2 romaine lettuce (chopped)
- 16 cherry tomatoes (quartered)
- 1 cucumber (diced)
- 16 kalamata olives (sliced)
- 1 cup feta cheese (150g)
Mix together the ingredients for the salad dressing.
Chop the salad ingredients and place in a large bowl.
Pour over the dressing and toss everything together.
- Chop your veggies into similar sized small pieces so that it's easy to eat and everything combines easily.
- Don't dress the salad until just before serving so that the lettuce stays nice and crisp.
- Once tossed, sprinkle over. little salt and black pepper to enhance the flavors further.
