For the slaw
- 16 ounce bag prepared slaw (454g)
- 2 fresh jalapenos (finely diced)
- ½ cup fresh cilantro (finely chopped) (8 tablespoons)
- 1 red bell pepper (finely diced)
- 2 avocados (diced)
- ½ cup shredded Monetery Jack cheese (or cheddar)
Empty the bagged slaw mix into a large bowl. Dice the other slaw ingredients and add to the mix.
Mix together the ingredients for the slaw dressing.
Pour the dressing over the slaw and toss together til well coated.
For best results, let the slaw sit covered in the fridge for at least 30 minutes before serving to let the flavors develop.
- Dice the slaw ingredients fairly small so that everything mixes well together.
- Use Greek yogurt instead of sour cream to cut down on fat and calories.
- Keep covered and refrigerated before serving. Because this dish contains dairy, don't leave it at room temperature for more than a couple of hours.
