Ingredients

For the slaw

  • 16 ounce bag prepared slaw (454g)
  • 2 fresh jalapenos (finely diced)
  • ½ cup fresh cilantro (finely chopped) (8 tablespoons)
  • 1 red bell pepper (finely diced)
  • 2 avocados (diced)
  • ½ cup shredded Monetery Jack cheese (or cheddar)

For the slaw dressing

Instructions

  • Empty the bagged slaw mix into a large bowl. Dice the other slaw ingredients and add to the mix.
  • Mix together the ingredients for the slaw dressing.
  • Pour the dressing over the slaw and toss together til well coated.
  • For best results, let the slaw sit covered in the fridge for at least 30 minutes before serving to let the flavors develop.

Notes

  • Dice the slaw ingredients fairly small so that everything mixes well together.
  • Use Greek yogurt instead of sour cream to cut down on fat and calories.
  • Keep covered and refrigerated before serving. Because this dish contains dairy, don't leave it at room temperature for more than a couple of hours.
