Lettuce Greek Salad

Simple and quick to make, this lettuce Greek salad is a twist on the original. Tossed in a red wine and herb dressing it's perfectly fresh and delicious.

Ingredients

For the dressing

For the salad

  • 2 romaine lettuce (chopped)
  • 16 cherry tomatoes (quartered)
  • 1 cucumber (diced)
  • 16 kalamata olives (sliced)
  • 1 cup feta cheese (150g)

Instructions

  • Mix together the ingredients for the salad dressing.
  • Chop the salad ingredients and place in a large bowl.
  • Pour over the dressing and toss everything together.

Notes

  • Chop your veggies into similar sized small pieces so that it's easy to eat and everything combines easily.
  • Don't dress the salad until just before serving so that the lettuce stays nice and crisp.
  • Once tossed, sprinkle over. little salt and black pepper to enhance the flavors further.
