Ingredients

  • Potatoes: I like to use Yukon Golds for this recipe. They are fairly starchy, so they stay light and fluffy, but also have a nice buttery texture and flavor to them.
  • Oil: A little oil helps to crisp up the potatoes and brown them during cooking. Use a high heat neutral flavored oil like vegetable, canola or avocado for the best results.
  • Seasonings: Salt, black pepper and garlic powder.

Recipe Variations

These air fryer diced potatoes can easily be adjusted to suit your tastes by using different seasonings. Try them with:

Frequently Asked Questions

Do you have to peel the potatoes?

I prefer to peel the potatoes, but you can totally keep them on for a more rustic dish if you prefer, especially if they have fairly thin skins. Give the potatoes a good scrub under cold running water before dicing, seasoning and cooking.

Do you need to par-boil the potatoes before air frying?

There is no need to pre-cook the potatoes before cooking them in the air fryer, they can go in raw and come out with tender flesh, just don’t dice them larger than an inch.

Some recipes call for the potatoes to be soaked in cold water, but I find this step is not needed in this recipe.

Can you use other types of potatoes?

I love to use Yukon Golds for this recipe, slightly starchy, but still buttery, they turn out great. Starchier potatoes are fluffier in the middle, Russets work great for this. You can also use waxy potatoes like reds, they will have a creamier texture, but won’t get quite as crisp. All are delicious!

Make Ahead, Storage and Reheating

It’s best not to prep the potatoes too far ahead of time as they can start to brown.

Once cooked, they can be stored in an air tight container in the fridge for 3 to 4 days. You can reheat them quickly in the air fryer at 400F / 200c for 3 to 4 minutes to serve.

Recipe Notes and Tips

  • Your potatoes don’t have to be diced into perfect cubes, but don’t cut them too large or the middles may not cook through. An inch or smaller will work great.
  • For best results pre-heat your air fryer. If you don’t have a preheat setting, let the air fryer run for 5 minutes at 400F / 200c while you dice the potatoes.
  • Toss the potatoes several times during cooking so that they cook through evenly.

  • 2 pounds potatoes (I like to use Yukon Gold) (900g)
  • 3 tablespoons oil (canola, vegetable or avocado work best)
  • ½ teaspoon salt
  • pinch black pepper
  • ½ teaspoon garlic powder

Instructions

  • Preheat the air fryer to 400F / 200c.
  • Peel the potatoes and then dice them into cubes, around 1 inch in size. Don't worry if they aren't perfect!
  • Place the diced potatoes into a large bowl, and add the oil and seasonings. Toss well so that the cubes of potato are well coated.
  • Once the air fryer is pre-heated, place the potatoes into the air fryer basket and set to cook at 400F / 200c for 20 minutes.
  • Shake the basket every 5 minutes during cooking, so that the diced potatoes cook and brown evenly.
